Baked Feta Potatoes are a delightful twist on the classic potato side dish, bringing creamy feta cheese and roasted garlic together for a flavor explosion. This easy-to-make recipe features crispy potatoes seasoned with aromatic herbs, making it perfect for family dinners or gatherings.

  • 2 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon (halved)
  • 1 tablespoon honey
  • 20g fresh basil (about ¼ cup)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the potatoes, then par-boil them in salted water for 6-8 minutes. Drain and let steam dry for a few minutes.
  3. In a baking dish, toss the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and red chili flakes until well coated.
  4. Drizzle olive oil over the garlic head, wrap it in foil, and place it in the baking dish with the potatoes.
  5. Roast everything together for about 30-40 minutes until golden brown and crispy.
  6. Remove from oven and make space in the center for the feta; squeeze half a lemon over it.
  7. Return to oven and bake for another 15 minutes.
  8. After cooling slightly, squeeze roasted garlic into a bowl and mash; mix with juice from the remaining lemon half and stir back into potatoes along with fresh basil.
  9. Finish by drizzling honey over the dish before serving.
