  • 1 lb chopped cauliflower
  • 1 pint grape tomatoes
  • 2 leeks
  • 4 green onions
  • 8 slices turkey bacon
  • 2 tbsp dill pickle relish
  • 2 tbsp mustard
  • 1/2 cup keto mayonnaise
  • Olive oil
  • Pink salt
  • Cracked black pepper

Instructions

  1. Boil the chopped cauliflower in salted water until tender (about 7 minutes). Drain and cool on a baking sheet.
  2. Preheat your oven to 375°F. Roast halved tomatoes drizzled with olive oil and sprinkled with salt for 20–30 minutes until soft.
  3. Cook chopped turkey bacon in a skillet until crispy. Reserve some fat; sauté sliced leeks in the remaining fat until tender.
  4. In a large bowl, mix dill pickle relish, mustard, keto mayonnaise, salt, and pepper. Add cooled cauliflower, green onions, turkey bacon, leeks, and roasted tomatoes. Toss gently to combine.
