  • 1 can (20 oz) pineapple chunks with juice
  • 0.5 cup brown sugar
  • 0.33 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • salt and pepper (to taste)
  • red pepper flakes (optional)
  • chopped green onions (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. In a large skillet, heat olive oil over medium-high heat and brown the seasoned chicken for about 4 minutes.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Transfer browned chicken to the baking dish, pour pineapple chunks with juice over it, and drizzle the glaze on top.
  6. Cover with foil and bake for 25–30 minutes until chicken reaches an internal temperature of 165°F.
  7. Remove foil and bake uncovered for an additional 5–10 minutes to caramelize the glaze.
  8. Let rest for 5 minutes and garnish with green onions if desired.
