  • 1/31/2 cup cornstarch
  • 1/3 cup non-dairy milk (unsweetened)
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 cup buffalo sauce
  • 23 cups romaine lettuce (chopped)
  • 1/2 cup shredded vegan cheddar cheese
  • 1 avocado (sliced)
  • 4 large tortillas
  • 1 cup unsweetened almond milk yogurt (plain)
  • 2 tbsp lemon juice (fresh if possible)
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp fresh dill (minced, or 1 tsp dried)
  • 1 tbsp fresh parsley (minced, or 1 tsp dried)

Instructions

  1. 1. Preheat your oven to 400°F (204°C).
  2. 2. Slice the pressed tofu into strips (about 12-14 pieces).
  3. 3. In one bowl, mix cornstarch, garlic powder, and salt; in another bowl, pour non-dairy milk.
  4. 4. Dip each tofu piece in milk, then coat with the cornstarch mixture.
  5. 5. Bake on a parchment-lined sheet for about 25 minutes, flipping halfway.
  6. 6. Coat baked tofu in buffalo sauce and return to the oven for an additional 5 minutes.
  7. 7. Assemble wraps by spreading vegan ranch on tortillas and adding veggies and tofu.
  8. 8. Roll tightly and grill if desired for extra crispiness.
