  1. Slice zucchinis in half lengthwise to create 'steaks.' Score the flesh side in a crosshatch pattern, season with salt, and let sit for 15 minutes.
  2. In a skillet over medium heat, cook garlic and red pepper flakes in 2 tablespoons olive oil for about 1-2 minutes. Transfer to a bowl.
  3. In the same skillet, heat 1 tablespoon olive oil, dry zucchinis, then sear two halves flesh side down until golden brown (about 2-3 minutes). Repeat with remaining zucchini.
  4. Brush each zucchini with garlic oil and bake at 425°F for 8-10 minutes until tender. Top with cheeses.
