  • 1/2 cup mozzarella cheese
  • 1/3 cup parmesan cheese
  • 1 egg
  • 1 teaspoon garlic parsley salt
  • 1 cup cheese of choice for topping

Instructions

  1. Preheat oven to 425°F (220°C). Squeeze excess moisture from grated zucchini.
  2. In a bowl, mix squeezed zucchini with mozzarella, parmesan, egg, and garlic salt until well combined.
  3. Line a baking dish with parchment paper and spread the mixture evenly in the dish to about half an inch thick.
  4. Bake for 15 minutes until slightly golden.
  5. Remove from oven, sprinkle with additional cheese topping, and return for another 2–5 minutes until melted and golden.
  6. Slice into strips and serve hot.
