  • 1 lb boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 1 medium spaghetti squash
  • 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade)
  • 3 cups broccoli florets
  • Olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Halve the spaghetti squash lengthwise and scrape out the seeds. Season with oil and salt; place cut-side down on a baking sheet.
  3. In a casserole dish, combine chicken breasts and diced onion. Drizzle with olive oil and season; mix well.
  4. Bake both the squash and chicken for 30 minutes.
  5. Shred the chicken into pieces and scrape out spaghetti squash strands into the same dish.
  6. Add Alfredo sauce and broccoli; mix until combined.
  7. Return to oven for an additional 30 minutes until golden brown.
