  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts (cut into bite-sized pieces)

  • 1 recipe or package fajita seasoning mix (taco seasoning may also be used)
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a skillet over medium heat, add olive oil and sauté the chicken pieces until fully cooked. Remove from skillet.
  3. In the same skillet, cook sliced onions and bell peppers until tender.
  4. Return the chicken to the skillet and stir in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Transfer the mixture to a baking dish, sprinkle cheddar cheese on top, and bake for 10 to 15 minutes until bubbly.
