  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 cups mashed (cooked) sweet potato
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon (topping)
  • 1 tsp coconut palm sugar (or brown sugar, topping)
  • 1 tbsp unsalted butter (softened, for serving)
  • 1 tsp honey (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8.5" loaf pan with parchment paper.
  2. Blend rolled oats in a high-speed blender until they resemble flour.
  3. In a large mixing bowl, whisk together oat flour, cinnamon, baking soda, and sea salt.
  4. In the blender, combine mashed sweet potato, almond butter, honey, eggs, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients and stir gently until combined.
  6. Transfer batter to the loaf pan and sprinkle with a topping mixture of coconut palm sugar and cinnamon.
  7. Bake for about 50 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
