  • 1 1/2 cups overripe bananas (mashed)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour (or regular flour)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup white sugar (for the cinnamon sugar swirl)
  • 2 tsp cinnamon (for the cinnamon sugar swirl)

Instructions

  1. Preheat your oven to 350°F and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine melted butter and brown sugar; beat until mixed. Add mashed bananas, eggs, and vanilla; blend until smooth.
  3. Stir in gluten-free flour, baking soda, cinnamon, and salt until the batter is smooth.
  4. Pour half of the batter into the prepared pan. In a small bowl, mix white sugar and cinnamon for the swirl; sprinkle most of it over the batter.
  5. Add remaining batter in dollops over the swirl layer and finish with reserved cinnamon sugar on top.
  6. Bake for 55-65 minutes or until a toothpick comes out clean.
  7. Cool completely before slicing.
