  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoon unsalted butter (room temperature)
  • 5 tbsp unsalted butter (room temperature) for filling
  • 2/3 cup dark brown sugar
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules for filling
  • 2 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened) for frosting
  • 1 cup powdered sugar
  • 4 tbsp heavy cream
  • ¾ tsp instant coffee granules for frosting

Instructions

  1. Prepare tangzhong by whisking flour and water in a saucepan over medium heat until thickened, then let cool.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt.
  3. Warm the milk and dissolve instant coffee; then mix into dry ingredients with egg, vanilla extract, and tangzhong.
  4. Knead dough until smooth, incorporating softened butter gradually.
  5. Allow dough to rise until doubled in size.
  6. Mix softened butter, brown sugar, cinnamon, and coffee for filling; roll out dough and spread filling evenly.
  7. Cut into strips, roll up each piece, place in a baking pan, and let rise again.
  8. Bake at 325°F (163°C) until golden brown; cool before frosting with cream cheese mixture.
