  • 4 chicken thighs (boneless, skinless or chicken breasts)
  • Salt and black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chicken and brown for 2-3 minutes per side. Season with salt and pepper, then set aside.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for 2-3 minutes until fragrant.
  3. Pour in chicken stock and heavy cream. Stir in Parmesan cheese and cornstarch while whisking to combine smoothly.
  4. Return browned chicken to the skillet. Spoon sauce over it, reduce heat to medium-low, cover, and cook for 15-20 minutes until fully cooked.
  5. Stir in fresh basil before serving.
