  • 4 boneless, skinless chicken thighs
  • 1 tbsp olive oil

  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning

  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs for 2-3 minutes on each side until golden; season with salt and pepper.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for 2-3 minutes until fragrant.
  3. Pour in chicken stock and heavy cream; add grated Parmesan and whisk in cornstarch to create a smooth sauce.
  4. Return the cooked chicken to the skillet and cover it with the sauce. Lower heat to simmer and cook for 15-20 minutes until chicken is fully cooked.
  5. Stir in fresh chopped basil before serving warm.
