  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice from 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine flour and chopped cilantro. Coat each chicken breast in the mixture.
  3. Heat coconut oil and olive oil in a large oven-safe skillet over medium heat. Sear the coated chicken for 3-4 minutes on each side until slightly browned. Add minced garlic and cook for an additional 30 seconds.
  4. In another bowl, mix coconut milk, chicken broth, brown sugar, and juice from one lime until smooth. Pour this mixture over the chicken in the skillet.
