  • 19 oz can black beans
  • ½ cup salsa
  • 1 tablespoon taco seasoning
  • 1 tablespoon chipotle pepper in adobo sauce (or sriracha)
  • ½ teaspoon garlic powder
  • Olive oil
  • Tortillas (flour or corn)

Instructions

  1. Preheat your oven to 450º F.
  2. Drain and rinse the black beans. In a food processor, combine black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt; blend to desired consistency.
  3. Heat olive oil in a skillet over medium-high heat, add sliced green onions, and cook until fragrant. Stir in the bean mixture and cook for about 5 minutes.
  4. Fill each tortilla with several tablespoons of the bean mixture, adding dairy-free cheese if desired. Brush the outside of each tortilla with oil and place on a baking sheet.
  5. Bake for 6-8 minutes, flip carefully, then bake for another 6-8 minutes until golden brown and crispy.
  6. Serve immediately with your favorite toppings.
