  • 2 pounds boneless chicken (breasts or thighs)
  • 1/2 cup full-fat coconut milk
  • 1 onion, finely diced
  • 4 tablespoons coconut oil
  • Garlic and ginger (freshly minced)
  • Spices: garam masala, turmeric, cumin
  • 1/2 cup tomato paste
  • 1 cup full-fat coconut milk (for the sauce)

Instructions

  1. In a large bowl, mix marinade ingredients: coconut milk, lemon juice, garlic, ginger, and spices.
  2. Add chicken pieces to the marinade and coat well. Let sit for at least 30 minutes.
  3. Heat 2 tablespoons coconut oil in a pot over medium-high heat. Brown chicken in batches for about 3 minutes per side; remove and set aside.
  4. In the same pot, add remaining oil and sauté onions until translucent. Add garlic, ginger, and chili; cook until fragrant.
  5. Stir in tomato paste and spices; simmer with water until thickened.
  6. Blend sauce until smooth; return to pot.
  7. Add remaining coconut milk and browned chicken; simmer for another 10 minutes.
