  • 2 medium ripe bananas, mashed
  • ⅓ cup maple syrup
  • 1 cup grated carrots
  • 1 cup white whole wheat flour
  • ¾ cup quick oats
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/3 cup dairy free cream cheese
  • 1/3 cup dairy free butter
  • 1 cup powdered sugar
  • 1 tsp maple syrup
  • 1 tsp ground cinnamon
  • 1 tbsp dairy free milk (optional)
  • ¼ cup Greek yogurt
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350ºF (175ºC).
  2. In a mixing bowl, combine egg, applesauce, mashed bananas, maple syrup, and vanilla. Whisk until smooth.
  3. In another bowl, mix quick oats, baking soda, cinnamon, ginger, nutmeg, salt, and flour.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Stir in grated carrots.
  6. Pour the batter into a greased loaf pan and bake for 30 minutes uncovered; then cover with foil and bake for an additional 10-20 minutes until fully cooked.
  7. While baking, prepare frosting by beating dairy-free cream cheese with butter, powdered sugar, maple syrup, cinnamon, Greek yogurt, and vanilla until fluffy.
  8. Cool the bread before frosting.
