  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and oregano.
  2. Cook the chicken for about 5–7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add garlic and sauté with cherry tomatoes, zucchini, bell pepper, and red onion for about 5 minutes until tender.
  4. Stir in orzo pasta and chicken broth; bring to a boil. Reduce heat, cover, and simmer for about 10–12 minutes until orzo is cooked and liquid is absorbed.
  5. Return the chicken to the skillet; drizzle with balsamic vinegar and cook for an additional 2–3 minutes to combine flavors.
  6. Garnish with fresh basil before serving.
