  • 1 teaspoon gluten-free baking powder
  • 1 packet rapid rise yeast (2 1/4 teaspoons)
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey (or agave/maple syrup)
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups warm water (100-110°F)
  • 3 egg whites (room temperature)

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch x 5-inch bread pan.
  2. In a large bowl, mix the dry ingredients: flour, xanthan gum, baking powder, yeast, and salt.
  3. In another bowl, combine the wet ingredients: olive oil, honey, apple cider vinegar, and warm water.
  4. Gradually add the wet mixture to the dry ingredients while mixing on low speed until combined.
  5. Add the egg whites and salt; mix on medium speed until thick like cake batter.
  6. Pour the dough into the prepared pan and cover with plastic wrap and a kitchen towel. Let it rise in a warm area for about 30 minutes.
  7. Bake for approximately 30 minutes or until golden brown and the internal temperature reaches between 205-210°F.
  8. Allow cooling in the pan for ten minutes before transferring to a cooling rack.
