  • 3 eggs (at room temperature)
  • 1 cup granulated sugar
  • ½ cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest (grated on a Microplane)
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish by greasing it and lining it with parchment paper.
  2. In a bowl, beat softened butter, granulated sugar, lemon zest, and vanilla until fluffy. Add gluten-free flour and salt; mix until combined.
  3. Press the crust mixture into the baking dish evenly and poke holes with a fork. Bake for 20 minutes until golden brown.
  4. In another bowl, whisk eggs, sugar, lemon juice, zest, flour, and salt until smooth. Pour over the cooled crust.
  5. Bake again for 20–30 minutes until the center is set. Cool completely before slicing.
