Ingredients

Scale
  • 2 servings dry instant ramen noodles (about 140 g)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 10 oz extra firm tofu or veggies of choice (sliced)
  • Garnish: chopped scallions, sesame seeds

Instructions

  1. In a mixing bowl, combine the sauce ingredients: water or broth, soy sauce, corn starch, and any additional seasonings.
  2. Boil water in a medium pot; add ramen noodles and cook for about 2-3 minutes less than package instructions until slightly chewy.
  3. Drain the noodles and run cold water over them to stop cooking if desired.
  4. In a frying pan, sauté sliced tofu or veggies over medium-high heat until cooked through.
  5. Pour the prepared sauce into the pan and let simmer for 2-3 minutes until slightly thickened.
  6. Add the drained noodles to the frying pan; toss everything to coat evenly in the sauce.
  7. Continue cooking on medium-high heat for about 3 minutes until noodles absorb some sauce.
  8. Serve garnished with scallions and sesame seeds.
