  • ½ teaspoon lemon zest (optional)
  • ½ cup fresh blueberries

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain the cottage cheese and blend until smooth.

  4. In another bowl, mix egg yolks with blended cottage cheese, cornstarch, vanilla extract, lemon zest, and sweetener until combined.
  5. Gently fold the yolk mixture into the egg whites to retain airiness.
  6. Fold in fresh blueberries carefully.
  7. Scoop portions onto the prepared baking sheet, spacing them about 2 inches apart.
