  • 1 onion (diced)
  • 5 garlic cloves (minced)
  • 1 heaped tablespoon fresh ginger (minced)
  • 1 medium head of broccoli (cut into small florets)
  • 1 (15 oz) can of chickpeas (rinsed and drained)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch
  • 1/3 cup vegetable broth
  • 1/2 cup of water
  • Black pepper & sea salt (to taste)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • Pinch of cayenne pepper

Instructions

  1. Heat oil in a wok or large skillet over medium heat. Add diced onion, minced ginger, minced garlic, and spices. Sauté for about 3-4 minutes until fragrant.
  2. Add broccoli florets and vegetable broth. Stir-fry until the broccoli is tender yet bright green, about 10 minutes.
  3. While the broccoli cooks, mix together water, soy sauce, vinegar, maple syrup, and cornstarch in a bowl until smooth.
  4. Pour the sauce into the pan with chickpeas and bring to a boil for a few minutes to thicken slightly.
  5. Taste and adjust seasonings as needed before serving over cooked rice or alone.
