  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, clove, and espresso powder.
  3. In another bowl, cream softened butter with brown and white sugars until light and fluffy.
  4. Mix in the egg, vanilla extract, and molasses until well combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Scoop dough portions, roll them in sugar, and place on prepared baking sheets.
  7. Bake for about 13 minutes until edges are firm but centers remain soft.
  8. Let cool; prepare glaze by mixing powdered sugar with cinnamon and espresso or coffee, then drizzle over cookies.
