  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • 1/4 cup salted butter, slightly softened (room temperature)
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together softened butter, applesauce, eggs, white sugar, and vanilla extract until smooth.
  3. Add almond flour, oat flour, baking powder, and salt; mix until well combined.
  4. In a separate bowl, combine melted butter with oat flour, white sugar, and cinnamon for the filling.
  5. For the streusel topping, mix room temperature butter with brown sugar, almond flour, oat flour, and cinnamon until crumbly.
  6. Grease an 8×8 baking dish. Pour half of the batter into the dish and spread evenly.
  7. Sprinkle half of the cinnamon filling on top and swirl it in. Top with remaining batter and sprinkle leftover filling before swirling again.
  8. Bake for 25 minutes; add streusel topping gently on top and bake for another 18 minutes.
  9. Allow to cool completely before slicing into squares.
