  • 3/4 cup brown rice flour
  • 3/4 cup white rice flour
  • 1 cup potato starch
  • 1 cup tapioca flour
  • 1 tsp xanthan gum
  • 1 teaspoon baking powder (gluten free)
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1 tsp apple cider vinegar
  • 6 cups water for boiling
  • 1/2 cup baking soda
  • Dairy-free margarine for brushing
  • Kosher Salt

Instructions

  1. In a bowl, mix lukewarm water with yeast and honey; let it froth for 5 minutes.
  2. Combine dry ingredients (brown rice flour, white rice flour, potato starch, tapioca flour, xanthan gum, baking powder, salt) in a stand mixer.
  3. Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients; mix until combined.
  4. Let the dough rise in a greased bowl for about 1 hour until it has grown by 50%.
  5. Preheat your oven to 450°F and boil water mixed with baking soda in a large pot.
  6. Shape the dough into 1-inch bites and boil each for 1–1.5 minutes.
  7. Brush with dairy-free margarine or olive oil, sprinkle with salt, and bake for about 15 minutes until golden brown.
