  • 1 3/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 3 large eggs (room temperature)
  • 2 1/2 cups gluten-free all-purpose flour with xanthan gum
  • 2 teaspoons gluten-free baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk (Dairy-free use unsweetened almond milk.)
  • 2 teaspoons white vinegar
  • 1 1/2 cups strawberry reduction
  • 1 cup unsalted butter, softened (Dairy-free use Smart Balance butter)
  • 1 cup freeze-dried strawberries
  • 24 tablespoons milk (Dairy-free use unsweetened almond milk)
  • 4 cups powdered sugar
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Wash, hull, and chop strawberries; mix with sugar and lemon juice to macerate for 15 minutes.
  3. Cream butter and sugar until fluffy. Add eggs one at a time along with vanilla extract.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt; gradually combine with wet ingredients alternating with milk mixed with vinegar.
  5. Fold in the prepared strawberries and strawberry reduction.
  6. Fill muffin tins two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
  7. Cool cupcakes before frosting them generously with strawberry buttercream.
