Instructions

  1. In a wide pot, bring the chicken broth and salt to a boil.
  2. Add cauliflower florets and reduce heat to low. Cover and steam for 20 minutes until fork-tender.
  3. Transfer cooked cauliflower to a food processor using a slotted spoon.
  4. In the pot with leftover broth, whisk in cubed butter until smooth.
  5. Combine the butter mixture with the cauliflower in the food processor. Add thyme and black pepper; blend until completely smooth. Adjust texture with warm broth if needed.
