  • 2 cups green beans
  • 1 cup diced onion
  • 1 cup mushrooms
  • 3 tsp minced garlic
  • 1/4 cup chicken broth
  • 1/3 cup sour cream
  • 2 Tbsp cream cheese
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp dried thyme
  • 2 cups shredded Colby jack cheese

Instructions

  1. In a cast-iron skillet over medium heat, brown the ground beef (about 5 minutes). Drain excess grease, leaving about 1 Tbsp in the pan.
  2. Sauté diced onions in the same skillet until softened (about 3 minutes). Add mushrooms and cook for an additional 2 minutes.
  3. Stir in green beans, minced garlic, and chicken broth; cook until softened (2-3 minutes).
  4. Reduce heat to medium-low, add cream cheese and sour cream, stirring to combine.
  5. Return ground beef to skillet along with sea salt, black pepper, and dried thyme; mix well.
  6. Top the mixture with shredded cheese evenly.
  7. Broil for about 2 minutes until cheese is melted and browned or cover and simmer on stovetop until cheese melts.
