  • 1 ½ tbsp olive oil
  • ⅔ cup diced carrots
  • 1 diced red bell pepper
  • ½ cup diced white onion
  • 12 oz thawed cauliflower rice
  • ¾ cup buffalo sauce
  • ⅓ cup nonfat Greek yogurt
  • 2 egg whites
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced carrots, onions, and red bell pepper with garlic powder, parsley, salt, and pepper until translucent (about 4 minutes). Add cauliflower rice and cook for another 4 minutes.
  3. In a mixing bowl, whisk together egg whites, buffalo sauce, and Greek yogurt until smooth. Stir in shredded chicken and sautéed vegetables until well combined.
  4. Transfer to an 8-inch x 8-inch baking dish and bake uncovered for 22-25 minutes or until set.
