  • 3 cups shredded chicken (rotisserie or cooked chicken breast)
  • 8 oz cream cheese (softened) or Greek yogurt
  • 1 cup shredded cheddar cheese (divided)
  • 4 cups cauliflower rice (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté your choice of chopped vegetables for 3-5 minutes until softened.
  3. In a large mixing bowl, combine shredded chicken, softened cream cheese (or Greek yogurt), sautéed veggies, seasonings, and half of the cheddar cheese. Mix well.
  4. In the same skillet, sauté cauliflower rice for about 5 minutes until tender. Add to the chicken mixture and stir until combined.
  5. Transfer to a greased baking dish and top with remaining cheddar cheese.
  6. Bake for about 25 minutes until bubbly and golden.
