  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup almond butter or cashew butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 tbsp coconut flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine the mashed sweet potato, melted dark chocolate, almond butter, maple syrup, egg, egg yolk, and vanilla. Mix until smooth.
  3. Add cacao powder, coconut flour, baking soda, and salt to the wet mixture. Stir until well combined.
  4. Fold in dark chocolate chips and chopped nuts if desired.
  5. Pour the batter into the prepared pan and bake for 25 minutes or until mostly clean when tested with a toothpick.
  6. Allow cooling for at least 10 minutes before slicing into squares.
