  • 1 1/4 cup blanched almond flour (or tigernut flour)
  • 3 Tbsp coconut sugar
  • 1 Tbsp ground flax
  • 1/8 tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter (or Sunbutter)
  • 1 cup dark chocolate
  • 1/2 Tbsp coconut oil

Instructions

  1. In a mixing bowl, blend together 1 1/4 cups almond flour, 3 tablespoons coconut sugar, 1 tablespoon ground flax, and 1/8 teaspoon salt.
  2. Stir in 3 tablespoons melted coconut oil, 1 tablespoon water, and 1 teaspoon vanilla extract until combined. Press into a lined baking sheet.
  3. Mix together 3 tablespoons peanut butter (or Sunbutter) with 2 tablespoons dark chocolate until smooth; pour over the base layer.
  4. Melt 1 cup dark chocolate with 1/2 tablespoon coconut oil; pour over the peanut butter layer.
  5. Chill in the refrigerator for 30 minutes, then cut into bar shapes.
