- 1 lb. lean ground beef (or ground turkey/chicken)
- 8 oz. dry farfalle pasta (or your choice)
- 1 can (14.5 oz.) diced tomatoes
- 2 cups low sodium chicken broth
- 2/3 cup fat-free cottage cheese
- 1 cup part-skim mozzarella cheese
- Minced garlic
- Salt
- Pepper
- 1 1/2 tsp. dried oregano
- 1 Tbsp. dried onion flakes
- In a large skillet, heat olive oil over medium-high heat and sauté minced garlic for one minute.
- Add ground beef, salt, pepper, oregano, and onion flakes; cook until browned.
- Stir in tomato sauce, diced tomatoes, chicken broth, and pasta.
- Cover and bring to a boil; then reduce heat and simmer for 14-15 minutes until pasta is tender.
- Remove from heat and mix in cottage cheese; top with mozzarella cheese.
- Cover for 1-2 minutes until cheese melts; garnish with fresh herbs if desired.
