  • 1 lb. lean ground beef (or ground turkey/chicken)
  • 8 oz. dry farfalle pasta (or your choice)
  • 1 can (14.5 oz.) diced tomatoes
  • 2 cups low sodium chicken broth
  • 2/3 cup fat-free cottage cheese
  • 1 cup part-skim mozzarella cheese
  • Minced garlic
  • Salt
  • Pepper
  • 1 1/2 tsp. dried oregano
  • 1 Tbsp. dried onion flakes

Instructions

  1. In a large skillet, heat olive oil over medium-high heat and sauté minced garlic for one minute.
  2. Add ground beef, salt, pepper, oregano, and onion flakes; cook until browned.
  3. Stir in tomato sauce, diced tomatoes, chicken broth, and pasta.
  4. Cover and bring to a boil; then reduce heat and simmer for 14-15 minutes until pasta is tender.
  5. Remove from heat and mix in cottage cheese; top with mozzarella cheese.
  6. Cover for 1-2 minutes until cheese melts; garnish with fresh herbs if desired.
