  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry apple vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Set the Instant Pot to 'Sauté' mode and heat olive oil. Season the roast with salt and pepper, then sear on all sides until browned (4-5 minutes per side). Remove the roast.
  2. In the same pot, add the sliced onions and cook until caramelized (10-15 minutes). Add minced garlic and cook for an additional minute.
  3. Deglaze the pot with apple vinegar (or broth), scraping up browned bits.
  4. Return the roast to the pot and add beef broth, thyme, bay leaves, and Worcestershire sauce. Secure the lid and set to 'Manual' or 'Pressure Cook' on high for 60 minutes.
  5. After cooking, allow natural pressure release for 15 minutes before carefully releasing any remaining pressure.
  6. Remove bay leaves, shred the roast with two forks, and serve hot.
