  • ¼ tsp sea salt
  • ½ tsp xanthan gum (optional)
  • 2 tbsp melted butter (for topping)
  • ½ tsp garlic powder (for topping)
  • ½ tbsp parsley (finely chopped)

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a muffin pan.

  3. In another bowl, whisk together eggs, sour cream, and melted butter until smooth.
  4. Mix wet ingredients into dry ingredients until fully combined.

  6. Scoop approximately 3 tbsp of batter into each muffin cup.
  7. Bake for 18-22 minutes until tops are golden brown; check with a toothpick for doneness.
