  • 2 cups yogurt
  • 2 1/2 tsp pure vanilla extract
  • 1 tbsp lemon juice (optional)
  • 2/3 cup erythritol
  • Optional crust: 2 cups almond or pecan flour
  • 1/4 tsp salt
  • Melted coconut oil or enough water to make it slightly sticky

Instructions

  1. If using a crust, mix flour and salt, then combine with melted coconut oil or water until sticky. Press into the bottom of a springform pan.
  2. Preheat oven to 350°F (175°C) and place a water-filled baking pan on the lower rack.
  3. Blend cream cheese, yogurt, vanilla extract, lemon juice (if using), and erythritol in a stand mixer until smooth.
  4. Pour mixture over the crust or directly into the pan if making it crustless. Bake for 30 minutes (38 minutes for an 8-inch pan).
  5. Turn off the oven after baking but leave the cheesecake inside for another 5 minutes to cool slowly.
