  • ¾ cup of sugar substitute
  • 1 1/4 teaspoons baking powder
  • ¼ teaspoon of salt
  • 4 eggs, room temperature
  • 4 oz full-fat cream cheese, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 teaspoon of vanilla
  • ¼ cup of melted salted butter, plus 1 tablespoon
  • 2 tablespoons of granulated sugar substitute
  • 2 teaspoons of cinnamon powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium-sized bowl, combine the almond flour, baking powder, and salt. Set this dry mixture aside.
  3. In a large bowl, use an electric mixer on high speed to blend the unsalted butter with the sugar substitute until light and fluffy. This should take about 2-3 minutes.
  4. Add the room temperature cream cheese and vanilla extract to the butter mixture. Mix well until fully incorporated.
  5. Add the eggs one at a time into your mixture. Make sure to mix well after each addition to maintain a smooth texture.
  6. Gradually add the dry ingredients (almond flour mixture) into the wet ingredients. Mix until everything is fully combined into a batter.
  7. Distribute the batter evenly into a well-greased mini muffin pan (24-cup capacity). Bake for about 12 to 15 minutes or until they are slightly browned. A toothpick inserted should come out clean when they are done.
  8. Allow your mini churros to cool for about 5 minutes before handling them.
  9. In a small bowl, melt the salted butter in the microwave—this is what you will use for dunking. In another bowl, combine granulated sugar substitute and cinnamon powder.
  10. Using a spoon, dunk each mini churro into melted butter and then roll it in the cinnamon 'sugar' mixture until fully coated on all sides.
