  • 1 ¼ cups almond flour
  • ¾ cup of sugar substitute
  • 1 1/4 teaspoons baking powder
  • ¼ teaspoon of salt
  • 4 eggs, room temperature
  • 4 oz full-fat cream cheese, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 teaspoon of vanilla
  • 1/4 cup of melted salted butter, plus 1 tablespoon
  • 2 tablespoons of sugar granulated substitute
  • 2 teaspoons of cinnamon powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, baking powder, and salt; set aside.
  3. In another bowl, blend unsalted butter and sugar substitute until fluffy. Add cream cheese and vanilla; mix well.
  4. Incorporate eggs one at a time, mixing thoroughly after each addition.
  5. Combine wet and dry ingredients to form a batter.
  6. Fill a greased mini muffin pan with the batter and bake for 12-15 minutes until lightly browned.
  7. Cool for 5 minutes before dunking in melted butter and rolling in cinnamon-sugar mixture.
