  • 5 eggs (whites and yolks separated)

  • 3 tbsp full-fat coconut milk

  • 1 tbsp melted coconut oil

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine coconut flour, xanthan gum, baking powder, sea salt, and collagen.
  3. In another bowl, whisk together coconut milk, egg yolks, and melted coconut oil.
  4. In a separate bowl, whip egg whites until stiff peaks form.
  5. Gently fold the wet mixture into the whipped egg whites, then slowly incorporate the dry ingredients.
  6. Grease a loaf dish with melted coconut oil and pour in the batter.
