  • 1 tablespoon erythritol
  • 1/2 cup water
  • 1/2 cup butter, unsalted (softened)
  • 1/2 cup erythritol
  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup cream, whipping
  • 2 tablespoons erythritol (ground)
  • 1 tablespoon vanilla extract
  • 2 cups strawberries (sliced)

Instructions

  1. Prepare the strawberry layer by mixing chopped strawberries with lemon juice, erythritol, and water; let sit for 15 minutes.
  2. Preheat oven to 350°F (175°C). In a bowl, cream together softened butter and erythritol until fluffy. Add egg yolks one at a time, then stir in vanilla.
  3. In another bowl, combine coconut flour, baking powder, and salt; gradually mix into wet ingredients along with water.
  4. Beat egg whites until stiff peaks form and gently fold into the batter. Pour into a greased baking pan and bake for about 25 minutes or until golden brown; cool completely.
  5. For the cream layer, whip mascarpone cheese with whipping cream, ground erythritol, and vanilla until thickened.
  6. Assemble by layering cake pieces with strawberry mixture and mascarpone cream in a serving dish or glasses.
  7. Chill for at least one hour before serving.
