  • 1 teaspoon lemon juice
  • 1 tablespoon erythritol
  • 1/2 cup water
  • 1/2 cup butter (unsalted, softened)
  • 1/2 cup erythritol
  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 tablespoons erythritol, ground
  • 1 tablespoon vanilla extract
  • 2 cups strawberries, sliced

Instructions

  1. Prepare the strawberry mixture by combining chopped strawberries, lemon juice, erythritol, and water in a bowl. Set aside.
  2. Preheat the oven to 350°F (175°C). Cream together softened butter and erythritol until fluffy. Add egg yolks one at a time and mix well.
  3. Stir in vanilla extract. In another bowl, combine coconut flour, baking powder, and salt; gradually add to the butter mixture with water until combined.
  4. Beat egg whites in a clean bowl until stiff peaks form; gently fold into the batter.
  5. Pour the batter into a greased baking dish and bake for about 25 minutes or until golden brown. Cool completely before assembling.
  6. Whip heavy cream in another bowl until soft peaks form; fold in mascarpone cheese, ground erythritol, and vanilla extract until blended.
  7. Assemble by cutting cooled cake into layers or cubes; alternate layers of cake pieces with strawberry mixture and cream layer in a serving dish.
  8. Garnish with sliced strawberries and refrigerate for at least an hour before serving.
