  • 5 graham cracker sheets
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/8 tsp pure vanilla extract
  • lime zest (to taste)

Instructions

  1. In a medium-large bowl, whisk together almond milk, Greek yogurt, and lime juice until fully combined. Allow the mixture to sit for about 5 minutes so it thickens slightly.
  2. Take the graham cracker sheets and crush them into fine crumbs using your hands or a rolling pin.
  3. In another bowl, mix together all-purpose flour, crushed graham crackers, sugar, baking powder, baking soda, and salt until well combined.
  4. Preheat your griddle or skillet over medium heat while you prepare the pancake batter.
  5. Whisk in melted coconut oil and eggs to the thickened wet mixture. Fold in lime zest for an added flavor punch.
