Instructions

  1. In a stand mixer, combine gluten-free flour, yeast, psyllium husk powder (if using), baking powder, and salt on low speed.
  2. Gradually add warm water, eggs, honey, and vegetable oil; mix on low for about 1 minute until combined.
  3. Increase speed to medium and beat dough for 5 minutes until stiff yet sticky.
  4. Grease a 9×4 baking pan and pour the batter in, smoothing the top with a spatula.
  5. Cover with greased plastic wrap; let rise in a warm place for about 30 minutes until it reaches two-thirds of the pan height.
  6. Preheat oven to 350°F during rising time. Remove plastic wrap and bake for 40-50 minutes until golden brown and internal temperature reaches 205°F.
  7. Cool in the pan for 5 minutes before transferring to a rack; let cool completely before slicing.
