  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  2. Add the rice and toast it slightly in the olive oil mixture for about 1 minute.
  3. Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir gently to combine.
  4. Bring to a gentle boil. Reduce heat to low, cover tightly with a lid, and let simmer for 18–20 minutes until liquid is absorbed.
  5. Remove from heat but let sit covered for an additional 5 minutes. Fluff the rice with a fork before serving and garnish with parsley if desired.
