  • 3/4 cup unsweetened cocoa powder
  • 1/8 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 8 tablespoons unsalted butter (at room temperature)
  • 2 tablespoons neutral oil (like vegetable, canola or peanut oil)
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons light corn syrup
  • 2 eggs (at room temperature, beaten)
  • 8 ounces semi-sweet chocolate (chopped)
  • 2/3 cup heavy whipping cream
  • 1/8 teaspoon kosher salt
  • 3 ounces miniature M&Ms candies or multicolored Sixlets (for decorating optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix gluten-free flour, xanthan gum (if needed), cocoa powder, and kosher salt.
  3. In another bowl, cream together granulated sugar, brown sugar, and unsalted butter; add neutral oil, vanilla extract, and corn syrup, mixing until smooth.
  4. Beat in the eggs one at a time until well-blended.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Pour batter into the prepared pan and bake for about 28 minutes or until a toothpick comes out mostly clean.
  7. For the topping, heat heavy whipping cream until just beginning to simmer; remove from heat and stir in chopped semi-sweet chocolate until melted and smooth.
  8. Pour topping over cooled brownies and optionally sprinkle with M&Ms or Sixlets before letting set.
