  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground chicken and cook until browned (6-8 minutes), breaking it apart with a spoon.
  3. Incorporate onion and garlic; sauté until onion is translucent (2-3 minutes).
  4. Stir in bell pepper, oregano, smoked paprika, cumin, salt, and pepper; cook for another 3-4 minutes until bell pepper softens.
  5. Mix in cherry tomatoes and olives; cook until tomatoes soften (about 5 minutes).
  6. Sprinkle feta cheese on top and let it melt slightly.
  7. Remove from heat and stir in parsley and lemon juice. Adjust seasoning if needed.
