  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease an 8-inch pan and set aside.
  2. In a medium-large saucepan over low heat, melt the butter. Add vegan marshmallows and stir until melted (about 75% melted before removing from heat).
  3. Stir in peppermint extract and green food coloring until well combined.
  4. Pour melted mixture over the Rice Krispies Cereal and mix until fully coated.
  5. Let cool for 5-8 minutes, then add most of the mini chocolate chips, mixing gently.
  6. Press mixture into the greased pan; top with remaining chocolate chips.
  7. Allow to cool completely for at least 30 minutes before cutting into squares.
