  • 1 cup almonds
  • 1 cup shredded coconut
  • 5 dates
  • pinch sea salt
  • 1 Tbsp coconut oil (only if needed)
  • 1.5 cups full fat coconut cream
  • 1 cup blueberries
  • 1/4 cup maple syrup
  • 1 Tbsp Earl Grey tea
  • 1 Tbsp corn starch
  • 2 tsp agar-agar
  • 1 tsp vanilla extract
  • 1/3 cup blueberries (for decoration)
  • 1/3 cup dragon fruit balls (for decoration)
  • 1 Tbsp shredded coconut (for decoration)
  • edible flowers (optional)
  • any of your favorite fruit or toppings

Instructions

  1. For the crust, blend almonds in a food processor until crumbly. Add shredded coconut, dates, and sea salt; process until sticky. Press into a tart tin and chill.
  2. For the filling, heat coconut cream in a saucepan. Stir in blueberries, maple syrup, Earl Grey tea, corn starch, and agar-agar until thickened. Strain to remove bits.
  3. Pour filling into the crust and chill overnight for best results.
  4. Decorate with additional blueberries and serve chilled.
