  • 8 oz fresh mozzarella
  • 2 cups grape tomatoes (halved)
  • Fresh basil (chopped)
  • Italian seasoning
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 2 tbsp vegetable oil
  • Sea salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, mix balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.
  3. In another bowl, combine torn mozzarella with halved tomatoes and chopped basil; season with salt and pepper.
  4. Heat an oven-safe skillet over medium-high heat and add vegetable oil. Season chicken with salt and pepper; sear for 2-3 minutes on each side until golden brown.
  5. Pour the balsamic mixture over the chicken and simmer briefly.
  6. Top the chicken with the mozzarella-tomato mixture and bake uncovered for 18-23 minutes until cooked through.
